Rabbi Louchheim’s Lemon Bars

Rabbi Louchheim's Lemon Bars

Ingredients

CRUST

  • 1½ cup flour
  • ½ cup confectioners; sugar
  • ¾ cup softened butter

FILLING

  • 4 eggs
  • 1½ cup sugar
  • 3 Tbsp flour
  • 1 tsp baking powder
  • ½ cup fresh lemon juice

Instructions

CRUST

  • Press into a 13" x 9" pan.
  • Preheat oven to 350°.
  • Bake for 15 minutes until golden brown. Remove from oven.

FILLING

  • Pour over crust – bake until lightly brown, approximately 20minutes.  When completely cooled sprinklewith powdered sugar.
     
    I forgot to grease the aluminum pan and I had no problemgetting the bars out.

Also, I used vegan butter. Amazing! enjoy. It is so easy to make this.
